A Brief History of Chocolate and An Introduction to Single Origin Tasting

For July, the Continuing Education Seminar will be “A Brief History of Chocolate and An Introduction to Single Origin Tasting”, given by Melodye Rooney, PhD.

During her three years in Caracas, Venezuela, Melodye became interested in cacao’s biology and chemistry, and in bean-to-bar marketing for chocolate. She will discuss the use of cacao by the Olmecs, Mayans, and Aztecs, the adoption of chocolate by the Spanish conquistadors, its development as an agricultural commodity, and its particular characteristics that make it so irresistible to us! Included will be a chance to sample some single origin chocolates from around the world, as well as some local chocolates. This talk will be both on Zoom and in-person, followed by the chocolate tasting. More information will be available a few weeks before the seminar.
